Recipes | Whipped Feta with Roasted Garlic & Olives

Some dishes come and go—this one never leaves the menu.

Rich, creamy whipped feta. Slow-roasted garlic that melts like butter. Briny, blistered olives with just the right amount of salt. It’s smooth yet bold, indulgent yet balanced, the kind of dip that makes people hover near the snack table, sneaking bite after bite.

 

Ingredients:

  • 1 (8oz) block feta
  • 2 (8oz) blocks cream cheese
  • 7oz pitted olive medley – we use Frederick’s Olives Jubilee, but go with your favorite
  • 1 head garlic, peeled
  • 2 shallots, peeled and quartered
  • 2 lemons, quartered
  • Thyme sprigs – because fresh herbs make everything better
  • Olive oil

 

Instructions:

1. Roast the Good Stuff

🔥 Preheat your oven to 300°F.

🥣 In a small oven-safe dish, toss together the olives, shallots, lemon quarters, and thyme with a light drizzle of olive oil. Roast until the shallots soften and the olives blister—about 30 minutes.

🫙 In another small oven-safe dish, place the garlic cloves and completely submerge them in olive oil. Roast until golden, soft, and fragrant—this is garlic confit, and it’s absolute magic. (Pro tip: Save that garlic-infused oil for drizzling on everything.)

 

2. Blend Until Smooth

🔪 While everything roasts, blend the feta and cream cheese in a food processor until smooth, scraping down the sides as needed.

🧄 Once the garlic confit and shallots have cooled, drain the garlic (but save that infused oil!). Squeeze the roasted lemons into the food processor, strip the thyme leaves off the stems, and blend everything together.

💫 If it feels a little thick, add a splash of that garlic-infused oil and blend again until silky smooth.

 

3. Serve & Enjoy
